Things you will need

  • 4 cups sweet rice

  • 2 cups jasmine rice

  • 25 Chinese dried shiitake mushrooms

  • 6 Chinese sausages (LOP Chong)

  • 1 pound lean pork barbecue Chinese, store-bought

  • 1 tablespoon vegetable oil

  • 2 1/2 tablespoons soy sauce

  • 5 cups low sodium chicken stock

  • 3 tablespoons oyster sauce

  • 1 cup chopped green onions

  • 1 cup chopped cilantro

Step by Step Method

  1. In a bowl, soak mushrooms in warm water for about 30 minutes, until tender. In a 6 quart pot, wash all the rice in several changes of cold water until water runs clear. Soak the combined fresh and jasmine rice for 1 hour in cold water up.

  2. When softened, drain and squeeze the mushrooms dry, reserving the liquid. Cut and discard stems and chop caps.

  3. Cut the sausage and barbecued pork and reserve separately.

  4. Heat wok or large skillet over high heat until smoking hot, but not. Add oil and Chinese sausage, and saute 1 minute. Add mushrooms and grilled pork, and saute for 3 to 4 minutes until heated through. Add soy sauce one tablespoon , stir it to mix, close the heat and set aside.

  5. After it cool down, drain the water out of the rice. Add chicken broth and enough reserved mushroom liquid to measure 1 cup and bring to a boil over high heat. Decrease the heat and let it run on low heat for 8-10 min. Scoop quickly and add Chinese sausage mixture on top of rice. Immediately cover and cook rice for additional 25 to 30 minutes, or until the broth is completely absorbed and rice is tender. Wait it for 5 min. Add one and half tablespoons soy sauce, oyster sauce, green onions, cilantro and mix. Depending upon your test, season it.

  6. Serve and enjoy.
